- 250 grams halloumi cheese
- 2 cups mixed salad greens e.g., spinach, arugula, romaine
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- 1 bell pepper red or yellow, sliced
- ¼ red onion thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt to taste
- pepper to taste
- fresh parsley or basil for garnishing (optional)
Preheat your grill or grill pan over medium-high heat.
Slice the halloumi cheese into ½-inch thick slices.
Grill the halloumi for about 2-3 minutes on each side until golden brown and slightly charred. Use tongs to carefully turn the slices.
While the halloumi is grilling, prepare the salad. In a mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
Drizzle the salad with olive oil and balsamic vinegar. Season with salt and pepper to taste and toss gently to combine.
Once the halloumi is done, remove it from the grill and let it cool slightly.
