Ingredients
  

  • 1 medium-sized ripe pineapple About 3-4 pounds.
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted coconut oil Or butter.
  • ½ teaspoon vanilla extract Optional.

Instructions
 

  • Preheat the grill to medium-high heat.
  • Cut the pineapple into thick rings, about ½ inch thick, discarding the outer skin and core.
  • In a bowl, mix together the brown sugar and ground cinnamon.
  • Brush each pineapple ring with melted coconut oil. If desired, sprinkle the cinnamon-sugar mixture over both sides.
  • Once the grill is ready, place the pineapple rings on the grill. Cook for 3-4 minutes on each side, or until grill marks appear and the pineapple is lightly caramelized.
  • Remove from the grill and drizzle with vanilla extract while hot, if using.
  • Serve warm on its own or with a side of ice cream or yogurt.

Notes

For an added kick, you can marinate the pineapple rings in rum or lime juice before grilling.
Grilled pineapple can be used as a topping for burgers, in a fruit salad, or incorporated into desserts like pineapple upside-down cake.
Ensure the grill is clean and preheated adequately to achieve the best caramelization.
