Grilled Veggie Wraps

These grilled veggie wraps are a quick and delicious way to enjoy smoky, tender veggies wrapped in warm tortillas. Perfect for a light lunch or easy dinner, they combine fresh ingredients with a creamy hummus spread for a satisfying bite every time.

  • 2 medium zucchini trimmed and sliced
  • 1 bell pepper thinly sliced
  • 1 small red onion cut into thin slices
  • olive oil
  • ½ cup hummus
  • ¼ cup black olives sliced
  • ¼ cup feta cheese crumbled (optional but yummy!)
  • ½ head romaine lettuce or other leafy greens you love
  • 4 large tortilla wraps

  • Pre-heat the grill (or grill pan) to medium-high heat.
  • Cut your veggies if you haven’t already done so. Rub or toss the veggies with olive oil, salt, and pepper.
  • Place the veggies on the grill and grill for 10 minutes, flipping halfway. Cook until the veggies are lightly charred. Remove from the heat.
  • Optionally, grill the wraps at the end for about 1 minute per side.
  • Assemble the wraps by placing the tortillas on a work surface. Divide the hummus evenly among the tortillas and spread out.
  • Top with the lettuce, olives, and feta and then divide the grilled veggies among the 4 wraps.
  • Wrap up tightly and enjoy!
  • Cut wraps in half if you want, serve immediately, and enjoy.

Notes

These wraps are perfect served fresh and warm. You can store leftovers wrapped tightly in plastic wrap or foil in the fridge for up to 24 hours. The veggie filling can be stored separately for reheating. Avoid freezing with lettuce included.
