Ingredients
  

  • 1 lb ground beef
  • 4 medium-sized potatoes About 2 lbs / 900g, cut into bite-sized cubes.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • optional Fresh parsley for garnish

Instructions
 

  • Begin by peeling the potatoes and cutting them into bite-sized cubes. Set them aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion and sauté for 2-3 minutes until softened.
  • Stir in the minced garlic and cook for another minute, being careful not to burn it.
  • Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Season the beef with oregano, paprika, salt, and pepper. Mix well.
  • Add the cubed potatoes to the skillet, pouring in the beef broth. Stir everything together to ensure that the potatoes are coated.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the potatoes are tender.
  • If needed, season with additional salt and pepper. Stir gently before serving.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For added flavor, you can include vegetables like bell peppers or carrots.
This dish can also be made in a slow cooker; just combine all ingredients and cook on low for 6-8 hours.
Leftovers can be stored in the refrigerator and reheated easily in the microwave or on the stove.
