Equipment

  • 1 Large skillet or sauté pan
  • 1 Wooden spoon or spatula
  • 1 Measuring cups
  • 1 Measuring spoons
  • 1 Lid for skillet

Ingredients

  • 1 pound ground beef
  • 1 cup rice uncooked, long grain or white
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup bell pepper diced (any color)
  • 1 can diced tomatoes 14.5 ounces, with juice
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are soft.
  • Add minced garlic and cook for another minute until fragrant.
  • Push the vegetables to one side of the skillet, then add the ground beef. Cook until fully browned, breaking it apart with a spoon, about 5-7 minutes.
  • Season the beef with paprika, Italian seasoning, salt, and pepper. Stir to combine with the vegetables.
  • Add the uncooked rice to the skillet, stirring well to mix it with the beef and vegetables.
  • Pour in the diced tomatoes (with juice) and beef broth. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for about 15 minutes or until the rice is tender and has absorbed the liquid.
  • Once cooked, remove the skillet from heat and let it sit, covered, for an additional 5 minutes.
  • Fluff the rice with a fork and serve hot, garnished with fresh herbs if desired.
