- 1 pound ground beef
- 2 cups cooked rice About 1 cup uncooked.
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced any color
- 1 cup corn Fresh, frozen, or canned.
- 1 cup black beans Drained and rinsed.
- 2 tablespoons soy sauce
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
- chopped cilantro For garnish, optional.

Cook the rice according to package instructions. Set aside when done.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until the onion is translucent.
