Ingredients
  

  • 1 lb ground beef
  • 1 cup cooked rice white or brown
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • salt and pepper to taste
  • optional toppings sliced green onions, shredded cheese, avocado, salsa, or sour cream

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onions and bell peppers to the skillet. Sauté for about 5 minutes until softened.
  • Add minced garlic and cook for an additional 1 minute until fragrant.
  • Push the vegetables to the side of the skillet and add the ground beef to the center. Break it apart with a cooking spoon.
  • Cook the beef until fully browned, about 5-7 minutes. Drain excess grease if necessary.
  • Stir in the soy sauce, ground cumin, paprika, salt, and pepper. Mix well to combine with the beef and vegetables. Allow to cook for an additional 2-3 minutes.
  • To serve, place a scoop of cooked rice in each bowl, top with the beef mixture, and add any optional toppings you desire.

Notes

Feel free to customize your bowls with your favorite vegetables or sauces. You can also substitute ground beef with ground turkey or chicken for a leaner option. These bowls are great for meal prep, as they can be stored in the refrigerator for up to 3 days.
