  • 1 lb lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 2 tablespoon tomato paste
  • ¼ cup onions red or yellow
  • ¼-⅓ cup water
  • cup sour cream
  • 1 jalapeño sliced, seeds discarded
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • cup cilantro
  • 1 tablespoon lime juice fresh squeezed
  • ½ cup long grain rice uncooked
  • 1 15 oz can black beans drained
  • 1 15 oz can corn kernels drained
  • ½ cup diced tomatoes
  • ¼ cup shredded cheese more if you like

Instructions

  • Heat a large skillet over medium heat and cook ground beef until browned.
  • Add chili powder, garlic powder, onion powder, paprika, cumin, salt, and cayenne pepper. Stir 2-3 minutes.
  • Add chopped bell peppers and cook until tender, about 5-7 minutes.
  • Transfer beef mix to pressure cooker. Add rice, beans, corn, tomatoes, and water. Cook on high pressure for 10 minutes.
  • Release pressure naturally 5 minutes, then quick release. Stir in cilantro, jalapeño, lime juice. Top with cheese and sour cream.

Notes

Customize toppings as you wish — avocado, salsa, or greens make delicious additions. Store leftovers in fridge up to 4 days or freeze up to 3 months.
