Instructions
Heat a large skillet over medium heat and cook ground beef until browned.
Add chili powder, garlic powder, onion powder, paprika, cumin, salt, and cayenne pepper. Stir 2-3 minutes.
Add chopped bell peppers and cook until tender, about 5-7 minutes.
Transfer beef mix to pressure cooker. Add rice, beans, corn, tomatoes, and water. Cook on high pressure for 10 minutes.
Release pressure naturally 5 minutes, then quick release. Stir in cilantro, jalapeño, lime juice. Top with cheese and sour cream.
Notes
Customize toppings as you wish — avocado, salsa, or greens make delicious additions. Store leftovers in fridge up to 4 days or freeze up to 3 months.
