Ingredients
  

  • 1.5 pounds ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder For a spicier kick, increase amount or add hot sauce.
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika

Instructions
 

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Transfer the cooked ground beef to the crockpot.
  • Add the diced onion, minced garlic, and diced bell pepper to the crockpot.
  • Stir in the diced tomatoes (with juice), kidney beans, and beef broth.
  • Season with chili powder, cumin, salt, black pepper, and paprika. Mix well to combine all the ingredients.
  • Cover and cook on low for 6 hours or on high for 3 hours, until the flavors meld together and the vegetables are tender.
  • Serve hot, topped with optional shredded cheese, sour cream, and chopped green onions, if desired.

Notes

You can customize this recipe by adding corn, jalapeños, or any other vegetables you like.
Leftovers can be stored in the refrigerator for up to 3 days or frozen for later use.
For a spicier kick, increase the amount of chili powder or add some hot sauce.
