  • 2 tablespoons olive oil
  • 2 pounds Yukon gold or Russet potatoes chopped into ¼ inch cubes (no need to peel)
  • 1 ½ pounds lean ground beef
  • 1 ½ teaspoon kosher salt divided
  • 1 medium yellow onion finely diced
  • 1 clove garlic minced
  • 1 teaspoon mild chili powder
  • 1 can tomato sauce 15-oz
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 2 cups grated sharp cheddar cheese

  • Heat olive oil in a large skillet over medium heat. Toss in the chopped potatoes with ½ teaspoon of the salt. Cook for about 10 minutes, stirring now and then, until potatoes get golden and just a bit tender.
  • Pop those potatoes into a greased 9x13-inch baking dish to hold all that yum.
  • In the same skillet, add ground beef and the rest of the salt. Break it up and cook till browned, about 5 to 7 minutes.
  • Stir in onion and garlic, cook till onion softens, about 3 minutes. The smells gonna get you right here.
  • Sprinkle chili powder and add tomato sauce, Worcestershire sauce, and mustard. Let it simmer about 5 minutes so all flavors mingle and get cozy.
  • Pour this beef mix evenly over potatoes in the casserole dish, then cover top with cheese. It looks almost too good to bake yet!
  • Bake uncovered at 375°F for 15 to 20 minutes till the cheese melts and bubbles. When it’s done, let it cool a little before serving so you don’t burn your mouth.

Notes

Optional topping ideas include minced parsley or sour cream. To ensure even cooking, chop potatoes to similar size. Add a splash of water if potatoes stick to pan while cooking. Use lean beef to minimize grease.
