Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
Stir in the beef broth, salt, black pepper, oregano, and paprika. Let it simmer for about 5 minutes.
In the bottom of a 9x13 inch baking dish, layer half of the sliced potatoes evenly.
Spread the cooked ground beef mixture over the potato layer.
Add the remaining sliced potatoes on top of the beef layer, and sprinkle the cheddar cheese evenly over the potatoes.
Cover the baking dish with aluminum foil (to prevent burning) and place it in the oven. Bake for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Let it cool for a few minutes before serving.
