Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen green beans
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 2 tablespoons olive oil

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion and cook for about 3-4 minutes until it becomes translucent.
  • Stir in the minced garlic and cook for another minute, being careful not to burn it.
  • Add the ground beef to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  • Stir in the carrots and celery, cooking for an additional 5 minutes until they soften.
  • Add the diced tomatoes with their juices, beef broth, frozen green beans, dried basil, and dried oregano to the pot. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot in bowls and enjoy!

Notes

You can customize this soup by adding other vegetables such as corn or potatoes.
For a spicier kick, consider adding a pinch of red pepper flakes.
Leftovers can be stored in the refrigerator for up to 3 days, and it reheats well.
