Check the sealing ring in your pressure cooker to make sure it’s secure.
Peel and cube the sweet potato into bite-sized chunks.
Slice bell peppers, trim green beans, and chop broccoli florets.
Cut chicken breast into about 1-inch chunks.
In a large bowl, whisk together olive oil, chili powder, paprika, sugar, onion powder, garlic powder, cumin, cayenne, and salt.
Toss chicken and vegetables in the marinade until well coated.
Load everything into the pressure cooker and spread evenly.
Seal and cook on high pressure for 10 minutes. Let it naturally release for 5 minutes, then quick release the rest.
Serve hot with optional cheese, cilantro, lime wedges, or rice/quinoa.
Notes
Store leftovers in airtight containers in the fridge for up to 4 days. Freeze for longer storage in single portions. Reheat gently for best texture.
