  • 1 Sweet potato chopped into about 1 cup of cubes
  • 1 lb Boneless, skinless chicken breast cut into chunks
  • 1-¾ cup Assorted bell peppers 8 to 10 mini bell peppers
  • 1-½ cups Fresh green beans trimmed and ready
  • 3-½ cups Broccoli florets from 2 heads of broccoli
  • 5 tablespoons Olive oil
  • 2 teaspoons Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Granulated sugar
  • ½ teaspoon Onion powder
  • ½ teaspoon Garlic powder
  • ½ teaspoon Ground cumin
  • ¼ teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • ¾ cup Shredded cheddar cheese optional
  • Fresh cilantro for serving, optional
  • Lime wedges for serving, optional
  • Cooked rice or quinoa on the side or for meal prep

  • Check the sealing ring in your pressure cooker to make sure it’s secure.
  • Peel and cube the sweet potato into bite-sized chunks.
  • Slice bell peppers, trim green beans, and chop broccoli florets.
  • Cut chicken breast into about 1-inch chunks.
  • In a large bowl, whisk together olive oil, chili powder, paprika, sugar, onion powder, garlic powder, cumin, cayenne, and salt.
  • Toss chicken and vegetables in the marinade until well coated.
  • Load everything into the pressure cooker and spread evenly.
  • Seal and cook on high pressure for 10 minutes. Let it naturally release for 5 minutes, then quick release the rest.
  • Serve hot with optional cheese, cilantro, lime wedges, or rice/quinoa.

Notes

Store leftovers in airtight containers in the fridge for up to 4 days. Freeze for longer storage in single portions. Reheat gently for best texture.
