Healthy Taco Casserole (Easy and Budget Friendly)

  • 1 lb lean ground beef 90/10 is what I use
  • ½ medium onion diced
  • 1 small bell pepper diced
  • 2 small zucchini diced
  • 3 cloves garlic minced or half teaspoon garlic powder
  • 2 tablespoons taco seasoning homemade or store-bought
  • 14 oz fire-roasted diced tomatoes 1 can
  • 6 oz tomato paste 1 can
  • 2.75 cups beef broth
  • ½ cup frozen corn
  • 15 oz black beans 1 can, drained and rinsed
  • 1 cup uncooked long grain rice basmati or jasmine work great too
  • 1.5 cups shredded cheddar or Monterey Jack cheese divided

  • Preheat oven to 375 degrees Fahrenheit. Spray casserole dish with cooking spray.
  • Cook ground beef in a large skillet over medium heat until browned, breaking apart chunks.

  • Add diced onion, bell pepper, zucchini, and minced garlic. Cook until veggies soften and are fragrant.
    ½ medium onion, 1 small bell pepper, 2 small zucchini, 3 cloves garlic
  • Stir in taco seasoning, fire-roasted diced tomatoes, tomato paste, and beef broth. Simmer for 10 minutes until thickened.
    2 tablespoons taco seasoning, 14 oz fire-roasted diced tomatoes, 6 oz tomato paste, 2.75 cups beef broth
  • Pour mixture into casserole dish and spread evenly.
  • Bake uncovered for 25 to 30 minutes until bubbly and heated through.
  • Let cool slightly before serving. Add toppings as desired.

Notes

Optional toppings: salsa, diced avocado, sour cream, fresh cilantro, lime wedges, pickled jalapeños.
