Preheat oven to 375 degrees Fahrenheit. Spray casserole dish with cooking spray.
Cook ground beef in a large skillet over medium heat until browned, breaking apart chunks.

Add diced onion, bell pepper, zucchini, and minced garlic. Cook until veggies soften and are fragrant.

3 cloves garlic
Stir in taco seasoning, fire-roasted diced tomatoes, tomato paste, and beef broth. Simmer for 10 minutes until thickened.

Pour mixture into casserole dish and spread evenly.
Bake uncovered for 25 to 30 minutes until bubbly and heated through.
Let cool slightly before serving. Add toppings as desired.

Optional toppings: salsa, diced avocado, sour cream, fresh cilantro, lime wedges, pickled jalapeños.
