  • 2 lbs chicken breast cut into bite sized pieces
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 0.5 teaspoon kosher salt
  • 0.5 cup plain nonfat Greek yogurt
  • 0.25 cup lemon juice
  • 3 cloves garlic minced

  • Mix yogurt, lemon juice, garlic, dill, oregano, and salt in a bowl to make the marinade.
  • Add chicken to the marinade and stir to evenly coat. Refrigerate for at least 30 minutes and up to 4 hours.
  • Heat skillet on medium-high heat. Sear marinated chicken pieces 5–7 minutes per side until golden and cooked through.
  • Transfer seared chicken to pressure cooker. Cook under high pressure for 8 minutes.
  • Let pressure naturally release for 10 minutes before opening the lid.
  • Stir gently and serve hot.

Notes

For best results, marinate the chicken overnight and use freshly squeezed lemon juice. You can grill instead of pressure cooking if preferred.
