Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and sliced
  • 2 cups mixed vegetables (peas, carrots, corn) Feel free to customize the vegetables to your family's liking; green beans or bell peppers work well too.
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  • Add the ground beef to the skillet, stirring occasionally until browned and cooked through (about 5-7 minutes). Drain any excess fat.
  • In a large mixing bowl, combine the cooked beef mixture, sliced potatoes, mixed vegetables, cream of mushroom soup, salt, pepper, and paprika. Mix well until everything is evenly coated.
  • Transfer the mixture into a 9x13-inch baking dish, spreading it evenly.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  • After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Bake uncovered for an additional 15 minutes or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let it cool for 5 minutes before serving.

Notes

Feel free to customize the vegetables to your family's liking; green beans or bell peppers work well too.
You can also substitute ground beef with ground turkey or chicken for a lighter option.
This dish can be prepared ahead of time and refrigerated before baking. Just add an extra 10-15 minutes to the cooking time if baking from cold.
