Heat olive oil and unsalted butter in a skillet over medium heat until hot.
Season chicken breasts with salt and pepper. Cook in skillet until golden brown, about 6 to 7 minutes per side.
Melt 2 tablespoons butter in a small saucepan, then stir in buffalo hot sauce, honey, and brown sugar. Keep warm.
Slice or shred cooked chicken. Toss with half of the buffalo sauce.
Lay flatbreads out and spread buffalo chicken evenly on each. Top with shredded cheddar cheese and roll tightly, sealing edges.
Preheat air fryer to 375°F (190°C).

Notes
