Preheat the oven to 400°F (200°C) or prepare a grill over medium-high heat.
In a small mixing bowl, whisk together honey, soy sauce, Dijon mustard, olive oil, garlic powder, salt, and pepper.
Place the salmon fillets on a baking sheet lined with parchment paper or on the grill. Brush the fillets with the honey glaze mixture evenly on both sides.
Bake in the oven for 12-15 minutes or grill for about 6-8 minutes per side, until the salmon is cooked through and flakes easily with a fork.
While the salmon is cooking, prepare the peach salsa. In a mixing bowl, combine diced peaches, red onion, red bell pepper, lime juice, chopped cilantro, and salt. Mix until well combined.
For the chipotle sauce, in another mixing bowl, combine sour cream, minced chipotle, lime juice, and salt. Stir until smooth.
To assemble the bowls, place a scoop of cooked rice at the bottom of each bowl. Top with a honey-glazed salmon fillet, a generous portion of peach salsa, and drizzle with chipotle sauce.
Serve immediately with lime wedges on the side if desired.
