  • 2 chicken breasts
  • ¼ cup honey
  • ¼ cup lime juice
  • 1 ripe avocado
  • 1 cup cooked rice
  • ¼ cup chopped cilantro
  • Salt and pepper to taste

  • Whisk honey and lime juice in a small bowl till mixed well for the marinade.
  • Season chicken breasts with salt and pepper. Pour the marinade over and let sit for at least 15 minutes.
  • Heat skillet or grill pan over medium heat. Grill chicken 6–7 minutes per side until golden and fully cooked.
  • Mash the avocado in a bowl. Season with salt and pepper. Mix in the cooked rice and chopped cilantro.
  • Slice grilled chicken. On each plate, layer rice-avocado mix, sliced chicken, and cilantro on top.
  • Serve right away while warm and fresh.

Notes

You can swap out rice for quinoa or couscous for variation. To save time, use rotisserie chicken. Clean-up’s a breeze with one-pot cooking. Leftovers keep best when stored separately and freshly assembled before serving.
