Instructions
Set your pressure cooker to sauté mode and heat olive oil.
Add minced garlic and grated ginger; cook until fragrant, about 1 minute.
Season chicken breast with salt and black pepper, then add to the pot; brown on each side for about 3 minutes.
Mix hot honey, soy sauce, rice vinegar, and red pepper flakes; pour over chicken.
Close lid and cook on high pressure for 10 minutes, then quick release the pressure.
Shred the chicken and serve on butter lettuce leaves topped with green onions, cilantro, carrots, and cucumber.
Notes
For added flavor, drizzle additional hot honey when serving.
