Preheat your oven to 425°F.
Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast 25–30 minutes, flipping halfway.
While potatoes roast, heat skillet over medium. Add olive oil and chopped onion, cook ~2–3 minutes until soft.
Add minced garlic, cook ~30 seconds until fragrant.
Add ground beef. Cook 6–8 minutes until browned, breaking it up with spoon.
Stir in taco seasoning and splash of water. Simmer 1–2 more minutes. Remove from heat.
Divide roasted sweet potatoes into 4 bowls.
Top each with ground beef and ½ cup cottage cheese.
Add avocado slices and drizzle 1 tablespoon hot honey on each. Serve immediately.
Notes
Store beef and sweet potatoes together in the fridge up to 4 days. Keep avocado and cottage cheese separate for best quality. Drizzle hot honey just before serving.
