  • 2 cups white rice to soak up sauce
  • 3–4 boneless skinless chicken breasts diced into bite-size pieces
  • 1 tablespoon vegetable oil to brown chicken
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 0.5 cup hot honey
  • 0.25 cup coconut aminos or soy sauce
  • 1 tablespoon vegetable oil for sautéing

  • Cook the white rice per package instructions and set aside.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat until shimmering.
  • Season diced chicken with garlic salt and pepper. Cook in skillet until browned and cooked through, 8–10 minutes. Remove and set aside.
  • Add remaining tablespoon of vegetable oil to the skillet. Sauté minced garlic and red pepper flakes for 1 minute until fragrant.
  • Add diced bell pepper. Cook 3–4 minutes until tender but still crisp.
  • Return cooked chicken to skillet and stir to combine.
  • Pour in hot honey and coconut aminos or soy sauce mixture.
  • Simmer for 3–5 minutes, stirring occasionally until sauce thickens and coats chicken.
  • Serve hot over prepared white rice.

Notes

To save time, prep your bell pepper and garlic ahead. Cook rice in an electric rice cooker while making everything else.
