Cook the white rice per package instructions and set aside.
Heat 1 tablespoon of vegetable oil in a skillet over medium heat until shimmering.
Season diced chicken with garlic salt and pepper. Cook in skillet until browned and cooked through, 8–10 minutes. Remove and set aside.
Add remaining tablespoon of vegetable oil to the skillet. Sauté minced garlic and red pepper flakes for 1 minute until fragrant.
Add diced bell pepper. Cook 3–4 minutes until tender but still crisp.
Return cooked chicken to skillet and stir to combine.
Pour in hot honey and coconut aminos or soy sauce mixture.
Simmer for 3–5 minutes, stirring occasionally until sauce thickens and coats chicken.
Serve hot over prepared white rice.
Notes
To save time, prep your bell pepper and garlic ahead. Cook rice in an electric rice cooker while making everything else.
