Whisk together soy sauce, honey, brown sugar, five-spice powder, minced garlic, and grated ginger in a medium bowl until dissolved and smooth.
Place chicken thighs in a resealable bag or dish and add the marinade. Seal and refrigerate for at least 2 hours.
Preheat oven to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top.
Place marinated chicken on the rack. Roast for 25-30 minutes, basting every 10 minutes with reserved marinade.
Switch to broil and cook for 2-3 more minutes for a charred finish.
Remove from oven and rest for 5 minutes before serving.
