Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion, cook until soft and translucent, about 5 minutes.
Stir in garlic, carrots, and celery. Cook another 5 minutes.
Season with salt, black pepper, and red pepper flakes.
Add tomato paste, stir to coat the vegetables.
Pour in the chicken broth and add white beans and Parmesan rind.
Bring to a boil, then reduce to a simmer and cook for 25 minutes.
Stir in chopped kale and simmer for an additional 5 minutes. Serve hot with grated Parmesan on top.
Notes
Serve with crusty bread for a complete meal. Leftovers taste even better the next day!
