Preheat the oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Make sure to pack it tightly for structural integrity.
Bake the crust in the preheated oven for 8-10 minutes, until golden brown. Remove from oven and let it cool while preparing the filling.
In another mixing bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
Pour the filling into the cooled crust and spread it evenly.
Bake the pie for an additional 15-20 minutes until the filling is set but still slightly jiggly in the center. Remove from oven and let it cool to room temperature.
Once cooled, refrigerate the pie for at least 2 hours before serving.
Before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread or dollop the whipped cream on top of the pie.
Garnish with additional lime zest if desired and slice into wedges to serve.
