Instructions
Instructions
Cook your rice according to package instructions ahead of time. Make sure it’s not mushy but tender enough to absorb all the creamy sauce.
In a large mixing bowl, stir together the cooked rice, cream of mushroom soup, cream of chicken soup, water, and Lipton Onion Soup Mix until creamy.
Slice chicken breasts into bite-sized pieces and add them to the bowl. Toss gently to coat the chicken with the sauce.
Melt the tablespoon of butter and drizzle it over the mixture. Stir to spread the butter evenly.
Transfer everything into a greased pressure cooker pot. Smooth the mixture out, then seal it with the lid and ensure the sealing ring is properly set.
Lock down the valve to sealing position and set the pressure cooker to high pressure for 10 minutes. Listen for the valve hiss as it builds pressure.
When cooking time is up, perform a quick release to let out the steam quickly.
Open the lid carefully to reveal the creamy, comforting casserole. Let it rest for a few minutes before serving.
Scoop out servings and enjoy the tender chicken and creamy rice combo, optionally paired with veggies on the side.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze without garnish and thaw overnight before reheating. Reheat covered to keep moisture in.
