Lazy Dog Chicken Lettuce Wraps Made Easy in Your Pressure Cooker

  • 1 pound ground chicken lean
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 0.5 cup onions diced
  • 0.5 cup water chestnuts diced
  • 0.25 cup hoisin sauce
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon ginger grated
  • 1 head butter lettuce leaves separated, fresh
  • 2 units green onions sliced thin
  • 0.25 cup cilantro chopped fresh

  • Heat vegetable oil in a large skillet over medium heat. Add garlic and onions; sauté until fragrant and translucent, about 2-3 minutes.
  • Add ground chicken to the skillet and brown evenly until cooked through, breaking it up into crumbles.
  • Stir in diced water chestnuts, hoisin sauce, soy sauce, rice wine vinegar, and grated ginger. Mix well and cook for 2-3 minutes until sauce thickens slightly.
  • Transfer mixture to pressure cooker. Seal lid with sealing ring. Cook on high pressure for 5 minutes.
  • Allow pressure cooker to naturally release for 5 minutes, then quick release remaining pressure. Open lid carefully.
  • Spoon warm chicken mixture into butter lettuce leaves.
  • Top with sliced green onions and chopped cilantro before serving.
  • Optional: skip skillet and add all ingredients except lettuce, green onions, and cilantro directly into pressure cooker and cook as above.
  • Serve immediately, optionally with rice or cauliflower fried rice on the side.

Notes

Use a food processor to speed chopping but avoid turning ingredients into a paste. Store chicken mixture and lettuce separately in airtight containers in fridge up to 5 days. Reheat filling in skillet, serve fresh lettuce. Freezing filling is possible for up to 1 month.
