  • 0.5 cup cucumber grated and moisture squeezed out for tzatziki
  • 1 tablespoon fresh dill chopped for tzatziki
  • 1 tablespoon fresh mint chopped for tzatziki
  • 1 teaspoon fresh lemon juice for tzatziki
  • 1 teaspoon garlic for tzatziki

  • Mix fresh garlic, lemon juice, salt, onion powder, garlic powder, oregano, brown sugar, and cracked black pepper in a bowl to create the marinade.
  • Add chicken thighs to the marinade and stir until coated. Refrigerate at least 30 minutes, or up to 2 hours for best flavor.
  • Preheat grill or skillet over medium heat. Load chicken into pressure cooker with a splash of water or broth for depth.
  • Seal the pressure cooker lid and cook for 10 minutes, then allow natural release for tender, juicy chicken.
  • While chicken cooks, prepare tzatziki by grating cucumber, squeezing out moisture, then mixing with Greek yoghurt, dill, mint, lemon juice, garlic, and salt.
  • Assemble wraps by slicing chicken strips, adding tomatoes, onions, and parsley on the wrap, then smothering with tzatziki and rolling up tightly.

Notes

For quicker prep, skip marinating step and add extra lemon juice before cooking. Use quick release if short on time but watch chicken texture. Tzatziki can be made ahead and tastes better after chilling.
