Ingredients
  

  • 2 cans chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ½ cup fresh basil leaves, chopped
  • ¼ cup feta cheese, crumbled optional
  • cup fresh lemon juice about 2 large lemons
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • to taste salt
  • to taste pepper

Instructions
 

  • In a large mixing bowl, combine the drained chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, and chopped basil leaves.
  • In a small bowl, whisk together the fresh lemon juice, olive oil, honey (or maple syrup), salt, and pepper until well combined.
  • Pour the lemon dressing over the chickpea salad and toss gently to combine all ingredients evenly.
  • If using, sprinkle the crumbled feta cheese on top and give it a light toss.
  • Taste the salad and adjust seasoning as needed. If desired, add more lemon juice, salt, or pepper to enhance the flavors.
  • Serve immediately, or refrigerate for about 30 minutes to allow the flavors to meld.

Notes

This salad can be stored in the refrigerator for up to 3 days in an airtight container.
