Equipment

  • 1 skewers metal or wooden, if wooden soak in water for 30 minutes
  • 1 mixing bowl
  • 1 whisk
  • 1 grill or grill pan
  • 1 meat thermometer
  • 1 tongs

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 pieces lemons zested and juiced
  • 3 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley

Instructions
 

  • Start by cutting the chicken breasts into 1-inch cubes and set aside.
  • In a mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk until well mixed.
  • Add the chicken cubes to the bowl and toss to coat them evenly in the marinade. Cover and let it marinate in the refrigerator for at least 15 minutes.
  • Preheat your grill or grill pan over medium-high heat.
  • Once the chicken has marinated, thread the chicken pieces onto the skewers, leaving a little space between each piece.
  • Place the skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.
  • Once cooked, remove the skewers from the grill and let them rest for 2-3 minutes.
  • Serve garnished with fresh parsley. Enjoy!

Notes

You can easily customize this recipe by adding veggies such as bell peppers, onions, or cherry tomatoes to the skewers.
Serve with a side of rice, salad, or pita bread for a complete meal.
Leftover skewers can be stored in an airtight container in the refrigerator for up to 2 days.
