Start by cutting the chicken breasts into 1-inch cubes and set aside.
In a mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk until well mixed.
Add the chicken cubes to the bowl and toss to coat them evenly in the marinade. Cover and let it marinate in the refrigerator for at least 15 minutes.
Preheat your grill or grill pan over medium-high heat.
Once the chicken has marinated, thread the chicken pieces onto the skewers, leaving a little space between each piece.
Place the skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.
Once cooked, remove the skewers from the grill and let them rest for 2-3 minutes.
Serve garnished with fresh parsley. Enjoy!
