  • 1 bottle Prosecco
  • 1 can Limoncello La Croix or another lemon sparkling water
  • 6-8 oz Limoncello
  • 2 lemons
  • mint leaves for garnish
  • Udon noodles fresh or frozen
  • chicken broth
  • coconut milk
  • yellow curry paste
  • garlic cloves
  • onion
  • ginger root
  • chicken breast sliced
  • green onions chopped
  • cheese tortellini
  • chicken breasts
  • sun-dried tomatoes
  • heavy cream
  • garlic powder
  • Italian seasoning
  • parmesan cheese
  • fresh basil

Instructions

  • Start with Curry Udon. Saute garlic, onion, and ginger in the cooker with oil until slightly golden, then turn off saute mode.
  • Add sliced chicken and yellow curry paste. Stir, add chicken broth and coconut milk. Top with udon noodles without stirring down.
  • Seal the lid, cook on high pressure for 5 minutes. Use quick release to avoid mushy noodles.
  • Meanwhile, season chicken breasts and sear in cooker. Remove and set aside.
  • Add sun-dried tomatoes, garlic powder, Italian seasoning, chicken broth, tortellini, and cream. Place chicken on top. Cook for 6 minutes, use slow release.
  • Sprinkle fresh basil and parmesan on tortellini. Serve udon hot with green onions. Enjoy!

Notes

To keep bubbles in your Prosecco, store with metal spoon handle-side down in bottle.
