- 4 pounds live lobsters or cooked lobster meat 1 ¼ pounds each if using live lobsters, 2 pounds if using cooked.
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh parsley

- 4 top-split hot dog buns
- 2 tablespoons unsalted butter
- as needed lettuce leaves for serving (optional)
Bring a large pot of salted water to a boil. If using live lobsters, cook for 8-10 minutes until bright red and cooked through. Remove lobsters with a slotted spoon and allow to cool. Extract the meat from the claws and tails, then chop into bite-sized pieces. If using cooked lobster meat, simply chop it into pieces.
In a medium bowl, combine mayonnaise, Dijon mustard, lemon juice, chives, parsley, salt, and pepper. Mix well until all ingredients are combined.
Fold the chopped lobster meat into the mayonnaise mixture, ensuring all pieces are well-coated. Taste and adjust seasoning if needed.
Preheat a grill or skillet over medium heat. Spread butter on the outside of each hot dog bun and grill or toast them until golden brown and crispy.
To serve, place lettuce leaves (if using) inside each toasted roll, then generously fill with the lobster mixture. Serve immediately.
You can substitute lobster with crab, shrimp, or a mix of seafood to create different variations.
