Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about ½ inch thick.
In a shallow bowl, whisk together the eggs and Dijon mustard until well combined.
In a second shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, basil, salt, and pepper.
Dip each chicken breast first into the egg mixture, coating both sides, then transfer to the breadcrumb mixture. Press the crumbs onto the chicken to create an even crust.
Arrange the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with olive oil spray to enhance browning.
Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the crust is golden brown.
Remove from the oven and let the chicken rest for a few minutes before serving.
