- 4 medium zucchinis About 1.5 pounds total.
- 8 ounces fresh mushrooms Button or cremini.
- 2 tablespoons olive oil
- 2 cloves garlic Minced.
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes Optional, for spice.
- 1 tablespoon fresh parsley Chopped, for garnish.
Wash and dry the zucchinis. Cut off the ends and slice them into half-moons about ¼ inch thick.
Clean the mushrooms with a damp cloth and slice them thinly.
