Ingredients
  

  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts About 1 lb or 450 g.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon crushed red pepper flakes Optional.
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • to taste salt and pepper
  • Fresh basil for garnish

Instructions
 

  • Begin by cooking the penne pasta according to the package instructions in a large pot of salted boiling water. Drain the pasta and set aside.
  • While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts to the skillet and cook them for about 5-7 minutes on each side, or until they are cooked through and golden brown. Remove from the skillet and let them rest for a few minutes.
  • In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
  • Stir in the oregano, thyme, and crushed red pepper flakes (if using) and cook for an additional minute.
  • Pour in the heavy cream and allow it to simmer for 2-3 minutes, stirring occasionally.
  • Add the grated Parmesan cheese to the sauce and stir until it is melted and the sauce is creamy. Season with additional salt and pepper to taste.
  • Cut the chicken into thin slices and return it to the skillet along with the cooked pasta. Toss everything together to combine.
  • Serve hot, garnished with fresh basil.

Notes

If you prefer a lighter version, you can substitute heavy cream with half-and-half or a low-fat cream alternative.
You can add vegetables such as spinach or sun-dried tomatoes for added flavor and nutrition.
