Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound Italian sausage Mild or spicy, preferably ground.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 6 cups chicken broth For added flavor, consider using homemade chicken broth.
  • 1 cup orzo pasta Can substitute for another small pasta if desired.
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach Can substitute for kale.
  • 1 cup grated Parmesan cheese For serving.
  • Fresh parsley, chopped optional for garnish

Instructions
 

  • Heat the olive oil in a large soup pot over medium heat. Add the sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  • Add the diced onion, garlic, carrots, and celery to the pot. Cook until the vegetables are soft and the onion is translucent, about 5 minutes.
  • Stir in the diced tomatoes (with their juices), chicken broth, orzo pasta, dried oregano, and dried thyme. Bring the mixture to a boil.
  • Once boiling, reduce the heat to a simmer and let the soup cook for about 10-12 minutes, or until the orzo is al dente.
  • Add the fresh spinach to the pot and stir until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  • Ladle the soup into bowls and top with grated Parmesan cheese and chopped parsley, if desired.

Notes

For added flavor, consider using homemade chicken broth.
You can substitute the orzo for another small pasta if desired.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage. Reheat before serving.
