  • 4 Tablespoons avocado oil divided for cooking and finishing
  • 1 ½ pounds ground turkey to make the dish hearty and filling
  • 3 Tablespoons Middle Eastern Seasoning with cumin, coriander, and paprika
  • 1 English cucumber diced
  • 1-2 cups cherry tomatoes halved
  • 1 cup feta cheese crumbled
  • Steamed rice or chopped salad greens as the base layer
  • 2 lemons for squeezing fresh juice
  • Extra-virgin olive oil to drizzle and boost flavor
  • Hummus and plain yogurt to dollop on for creaminess

  • Start by heating 2 tablespoons of avocado oil in a large skillet over medium heat until hot.
  • Add ground turkey and break it into small pieces. Cook until fully browned, about 7–10 minutes.
  • Stir in the Middle Eastern seasoning and cook for another 2 minutes, mixing well.
  • In a bowl, toss diced cucumber and halved cherry tomatoes with olive oil and fresh lemon juice.
  • Start assembling bowls by adding a base layer of steamed rice or salad greens.
  • Top with the warm spiced ground turkey, followed by the cucumber-tomato mixture.
  • Finish with crumbled feta cheese, a dollop of hummus and yogurt, and drizzle with olive oil and lemon juice.

Notes

Store cooked turkey separately for up to 4 days. Keep salad fresh in another container. Add toppings just before serving for best texture.
