- 12 pieces wonton wrappers
- 1 pound ground beef (or turkey)
- 1 cup canned black beans Rinsed and drained.
- 1 cup corn kernels Canned or frozen.
- 1 packet taco seasoning About 1 ounce.
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- ½ cup sliced black olives Optional.
- ¼ cup chopped fresh cilantro For garnish.
- sour cream For serving, optional.
Preheat your oven to 375°F (190°C).
Lightly grease a muffin tin. Press a wonton wrapper into each muffin cup, forming a cup shape.
In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the black beans, corn, and taco seasoning to the skillet. Stir well and cook for an additional 5 minutes to heat through.
Remove the skillet from the heat and spoon the taco mixture evenly into each wonton cup.
Top each filled cup with shredded cheddar cheese.
Bake in the preheated oven for 10 minutes, or until the wonton edges are crispy and the cheese has melted.
Once out of the oven, let cool for a few minutes. Top with diced tomatoes, black olives, and cilantro.
Serve warm with a dollop of sour cream if desired.
Feel free to customize the filling with your favorite taco ingredients, such as avocado or jalapeños.
These mini taco cups are best enjoyed fresh and warm, but they can be stored in the fridge for a day and reheated in the oven if needed.
