Line an 8x8 inch baking dish with parchment paper, leaving some overhang to make it easier to remove the bars later.
In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth.
Gently fold in the fresh blueberries, being careful not to break them.
In another bowl, mix the granola with almond butter until well combined.
Press the granola and almond butter mixture evenly into the bottom of the lined baking dish to form the crust.
Pour the blueberry yogurt mixture over the granola crust, spreading it evenly with a spatula.
If desired, sprinkle shredded coconut on top for added texture and flavor.
Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until the bars are set.
Once set, lift the bars out using the parchment paper overhang, cut into squares or rectangles, and serve.
