Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ¼ cup graham cracker crumbs Plus more for coating.
  • ¼ cup crushed nuts Walnuts or pecans optional, for coating.
  • ½ cup chocolate chips Optional, for drizzling.

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, and graham cracker crumbs. Mix well using an electric mixer or whisk until the mixture is smooth and well combined.
  • Cover the bowl with plastic wrap and refrigerate the mixture for about 10-15 minutes to firm up. This will make it easier to roll into balls.
  • Once the mixture has chilled, scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat this process until all the mixture is used and you have approximately 12 balls.
  • In a small bowl, combine additional graham cracker crumbs and crushed nuts (if using). Roll each ball in this mixture until fully coated. Place the coated balls on a cookie sheet lined with parchment paper.
  • If desired, melt the chocolate chips in the microwave or using a double boiler. Drizzle the melted chocolate over the balls for an extra treat.
  • Refrigerate the finished balls for an additional 30 minutes to set before serving.

Notes

These cheesecake balls can be stored in an airtight container in the refrigerator for up to a week.
Feel free to mix and match the coatings; crushed pretzels, coconut flakes, or crushed candy canes can also be delightful alternatives.
For a vegan version, consider using vegan cream cheese and a sweetener like maple syrup instead of powdered sugar.
