- 1 pound Italian sausage mild or spicy
- 1 large onion diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 4 large potatoes sliced (about ¼ inch thick)
- 2 cups kale chopped
- 1 cup heavy cream
- 1 teaspoon red pepper flakes optional

In a large pot or Dutch oven, heat a dash of olive oil over medium heat. Once hot, add the Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon. This should take about 5-7 minutes.
Add the diced onion to the pot and cook for an additional 3-4 minutes, until the onion becomes translucent.
Stir in the minced garlic and red pepper flakes, if using. Cook for another minute until fragrant.
Add the sliced potatoes to the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat to low. Simmer for about 15 minutes, or until the potatoes are tender.
Once the potatoes are cooked, stir in the chopped kale and let it cook for an additional 5 minutes.
Finally, stir in the heavy cream and season with salt and pepper to taste. Heat through until warm, but do not boil the soup after adding the cream.
If you prefer a thicker soup, you can mash some of the potatoes after cooking and before adding the kale.
Garnish with grated Parmesan cheese when serving for added flavor.

This soup can be stored in the fridge for up to 3 days and freezes well. If freezing, omit the cream and add it when reheating.
