Olive Garden Zuppa Toscana Soup

Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 4 large potatoes sliced (about ¼ inch thick)
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes optional
  • to taste salt
  • to taste pepper
  • as needed olive oil for sautéing

Instructions
 

  • In a large pot or Dutch oven, heat a dash of olive oil over medium heat. Once hot, add the Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon. This should take about 5-7 minutes.
  • Add the diced onion to the pot and cook for an additional 3-4 minutes, until the onion becomes translucent.
  • Stir in the minced garlic and red pepper flakes, if using. Cook for another minute until fragrant.
  • Add the sliced potatoes to the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat to low. Simmer for about 15 minutes, or until the potatoes are tender.
  • Once the potatoes are cooked, stir in the chopped kale and let it cook for an additional 5 minutes.
  • Finally, stir in the heavy cream and season with salt and pepper to taste. Heat through until warm, but do not boil the soup after adding the cream.
  • If you prefer a thicker soup, you can mash some of the potatoes after cooking and before adding the kale.
  • Garnish with grated Parmesan cheese when serving for added flavor.

This soup can be stored in the fridge for up to 3 days and freezes well. If freezing, omit the cream and add it when reheating.
