  • 2 cups Water for cooking the pasta
  • 1 cup Jarred mild salsa adds tangy flavor
  • 8 ounces Uncooked rotini pasta absorbs all the flavor
  • 1 ½ cups Shredded Mexican-style cheese melts into creamy sauce
  • Optional toppings chopped tomatoes, avocado, tortilla chips, chopped cilantro

  • In a large pot over medium-high heat, add the ground beef. Season with salt and pepper, and cook while breaking it apart until browned.
  • Drain excess grease. Stir in the taco seasoning, water, and salsa until well combined.
  • Add uncooked rotini pasta and ensure it's mostly submerged in liquid for even cooking.
  • Bring mixture to a boil, then reduce heat to a simmer. Cover and cook for 12 to 15 minutes, stirring occasionally.
  • Once pasta is tender and most liquid absorbed, remove from heat and stir in shredded cheese until melted and creamy.
  • Serve hot with optional toppings like chopped tomatoes, avocado, crushed tortilla chips, or chopped cilantro.

Notes

To save time, use pre-shredded cheese or prep toppings in advance. You can freeze leftovers or swap in ground turkey or beans for a twist. Reheat gently with a splash of water if needed.
