  • 1 pack Cajun andouille sausage cut into coins
  • 1 tablespoon Chopped garlic
  • 14.5 oz Chicken broth
  • 0.5 cup Heavy cream
  • 10 oz Rotel diced tomatoes and chilies
  • 8 oz Dry bowtie pasta
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Cajun seasoning *see notes

  • Slice the sausage into rounds for even cooking and optimal browning.
  • Brown the sausage slices in a pot over medium heat for about 5 minutes.
  • Add chopped garlic and sauté for 1–2 minutes until fragrant.
  • Pour in the chicken broth, heavy cream, and Rotel tomatoes with juices.
  • Add dry bowtie pasta and Cajun seasoning. Stir everything together well.
  • Bring to a boil, then cover and let simmer on low heat for 12–15 minutes.
  • Stir once or twice during cooking to prevent pasta from sticking.
  • Once the pasta is tender and most of the liquid is absorbed, do a quick steam release if using pressure cooker.
  • Stir in shredded cheddar cheese while hot until melted and creamy. Serve warm.

Notes

If Cajun seasoning lists salt as the first ingredient, reduce amount or taste before seasoning. The sausage and chicken broth already contain salt. Add extra spice like cayenne or pepper flakes if you like heat. Add-ins like broccoli, mushrooms, and shrimp work well too.
