Ingredients
  

  • 12 ounces pasta Your choice, such as penne or spaghetti.
  • 4 cups vegetable broth or chicken broth
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes Optional.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped For garnish.

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic.
  • Add the pasta to the pot, followed by the vegetable or chicken broth, red pepper flakes (if using), salt, and black pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to a simmer. Cover the pot and cook for about 12-15 minutes, or until the pasta is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  • Once the pasta is cooked, remove the pot from heat and stir in the grated Parmesan cheese. Mix until the cheese is melted and the pasta is creamy.
  • Taste and adjust seasoning if necessary. If the pasta is too thick, you can add a little more broth or water to reach your desired consistency.
  • Serve the pasta warm, garnished with chopped parsley.

Notes

Feel free to add vegetables such as spinach, peas, or cherry tomatoes for added nutrition and flavor.
You can substitute the Parmesan cheese with a vegan alternative if you prefer a dairy-free option.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of broth to loosen it up.
