- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 teaspoon paprika
- 1 teaspoon dried oregano

- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup frozen peas and carrots (or mixed vegetables)
- 1 N/A bell pepper, diced
- 2 N/A green onions, chopped (for garnish)
Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the chicken pieces to the pot. Season with paprika, dried oregano, salt, and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
Stir in the rice, ensuring it is well coated with the oil and mixed with the chicken and vegetables.
Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
After 15 minutes, add the frozen peas and carrots and diced bell pepper on top of the rice (do not stir). Cover again and cook for an additional 5 minutes, or until the rice is cooked and liquid is absorbed.
Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
Garnish with chopped green onions and serve warm.
You can substitute chicken with your choice of protein such as tofu or shrimp for a different flavor.
Feel free to add other vegetables based on your preference or what's available.
For an extra flavor boost, add a splash of lemon juice or a sprinkle of fresh herbs upon serving.
