Ingredients
  

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste N/A salt
  • to taste N/A pepper
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup frozen peas and carrots (or mixed vegetables)
  • 1 N/A bell pepper, diced
  • 2 N/A green onions, chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the chicken pieces to the pot. Season with paprika, dried oregano, salt, and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  • Stir in the rice, ensuring it is well coated with the oil and mixed with the chicken and vegetables.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  • After 15 minutes, add the frozen peas and carrots and diced bell pepper on top of the rice (do not stir). Cover again and cook for an additional 5 minutes, or until the rice is cooked and liquid is absorbed.
  • Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
  • Garnish with chopped green onions and serve warm.

Notes

You can substitute chicken with your choice of protein such as tofu or shrimp for a different flavor.
Feel free to add other vegetables based on your preference or what's available.
For an extra flavor boost, add a splash of lemon juice or a sprinkle of fresh herbs upon serving.
