One Pot Taco Gnocchi

This easy one pot taco gnocchi bake combines ground beef, taco seasoning, diced tomatoes, and tender gnocchi simmered to perfection and topped with melted cheddar cheese and fresh sour cream, olives, and green onions. A comforting, quick weeknight meal bursting with flavor.

  • 1 ½ lb ground beef fresh meat with a good fat balance for browning
  • 1 pkg taco seasoning mellow and spicy taco flavor
  • 1 15 oz can petite diced tomatoes with juices
  • 2 16 oz pkg gnocchi soft potato gnocchi, plain or with herbs
  • 2 cups beef broth base liquid for umami boost
  • 1 cup cheddar cheese sharp or mild, melts well
  • Sour cream to top finished dish
  • Black olives adds briny flavor on top
  • Green onions fresh crunch and color before serving

  • Brown the ground beef in the cooker pot on medium heat until no pink remains, then drain the fat.
  • Add taco seasoning and stir to combine with the beef.

  • Pour in the petite diced tomatoes with juices and beef broth, stir together.

  • Turn heat up to bring mixture to a boil, then add the gnocchi.

  • Reduce heat to medium-low and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking and ensure gnocchi is tender.
  • Once gnocchi is tender, stir in cheddar cheese until melted.

  • Serve topped with sour cream, black olives, and green onions.

Notes
