  • 1 cup refried beans creamy base essential for texture and flavor
  • avocado oil spray lightly grease tortillas for baking
  • toppings scallions, lettuce, tomato, sour cream, guacamole, salsa, onions, hot sauce, cilantro, avocado slices, jalapeños, lime wedges, dairy-free cheese optional

  • Preheat your oven to 375°F (190°C). This gets everything ready for the cheesy bake after your beef’s cooked.
  • Grab a large skillet, cook ground beef over medium heat till it browns, breaking it all up with a spoon as you go. No chunks, just nice crumbles.
  • Add taco seasoning and salsa to the beef, stir it all up good, cook for another 2-3 minutes till it’s heated through and smells amazing.
  • If you’re using green chiles, toss them in now.
  • Spray both sides of each tortilla with avocado oil and pop them in the oven for 2-3 minutes till they’re warm and bendy but not crispy.
  • Spread a good layer of refried beans on tortillas, then spoon on beef mixture.
  • Fold each tortilla up tight and place seam-side down in a baking dish to keep fillings in during baking.
  • Cover with shredded cheddar cheese generously, then bake for 10-15 minutes until cheese is melted, bubbly, and golden.
  • Remove from oven and pile on your favorite toppings, then dig in!
  • If the tacos aren’t crispy enough, broil on high for about 90 seconds watching closely to avoid burning until tortillas are golden brown.

Notes

Line the baking sheet with parchment paper before baking for easy cleanup. Adjust the amount of filling for tortilla size. Spray tortillas with cooking spray to get them crispy.
