  • ½ cup sour cream smooth and cool to contrast spices
  • 2-3 tablespoons milk to thin out the sour cream for drizzling

  • Get your pressure cooker ready with the sealing ring in place for proper pressure build.
  • In a bowl, stir together refried beans and taco seasoning until well combined. Spread evenly in a glass pie plate.
  • Pour the taco sauce over the beans, spreading gently without mixing.
  • Mash avocado with lime juice, salt, and garlic powder until smooth and creamy. Spread this guacamole layer over the taco sauce.
  • Place the pie plate inside the steamer basket or on the trivet in the cooker. Add 1 cup of water to the pot bottom to generate steam.
  • Lock the lid, set the valve to sealing, and cook on high pressure for 5 minutes. Carefully perform a quick release when done.
  • Sprinkle olives, shredded cheddar, tomato, and green onions around the edges.
  • Thin out sour cream with milk and use a squirt bottle to draw a spider web design on top.
  • Place the plastic spider in the center if desired for decoration.
  • Serve warm with tortilla chips for scooping.
  • Use pre-mashed beans or pre-cut veggies for shortcuts on busy days.
  • Make guacamole the night before and cover with plastic wrap to stay fresh.

Notes

Store leftover dip in an airtight container in the fridge up to 3 days. Freeze bean and guacamole layers separately without fresh toppings for longer storage. Reheat and reassemble before serving.
