- 1 tablespoon olive oil

Bring the vegetable broth or water to a boil in a medium saucepan.
Once boiling, remove from heat and stir in the couscous. Cover the saucepan and let it sit for 5 minutes to absorb the liquid.
In a separate pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped spinach to the pan with garlic and cook for 2-3 minutes, stirring until wilted.
Fluff the couscous with a fork and add it to the pan with the sautéed spinach. Stir to combine.
Mix in the grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.
Serve warm, garnished with lemon wedges if desired.
