1 large pot
1 colander
1 mixing bowl
1 cutting board
- 200 grams pasta (fusilli or penne)
- 1 can (150 grams) tuna in water, drained
- 100 grams cherry tomatoes, halved
- 1 small cucumber, diced
- 50 grams green bell pepper, diced
- 50 grams black olives, sliced
- 2 tablespoons mayonnaise For a lighter version, substitute with Greek yogurt.
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- to taste salt and pepper
- as desired fresh parsley for garnish Optional.
Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
Once cooked, drain the pasta using a colander and rinse under cold water to stop the cooking process. Set aside.
In a mixing bowl, combine the drained tuna, cherry tomatoes, cucumber, green bell pepper, and black olives.
In a separate small bowl, whisk together the mayonnaise, olive oil, lemon juice, salt, and pepper to create the dressing.
Add the cooled pasta to the bowl with the vegetables and tuna. Pour the dressing over the salad and gently mix until everything is well combined.
Taste and adjust the seasoning if necessary.
Garnish with fresh parsley before serving, if desired.
You can add other vegetables such as corn or peas for added flavor and nutrition.
For a lighter version, substitute the mayonnaise with Greek yogurt.
This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
